We love baking and its one of the activities that you won’t feel like much work needs to be done.  Whats specially nice is the aromatic smell that left after baking the whole kitchen and living room starts smelling like an Italian bakery, or at least that’s how we think it is. There are many varieties of bread that change with different ingredients added, fermentation process and the water content.

Making a simple bread is very simple and easy and it only requires 4 ingredients which are salt, water, yeast and flour but one can take this in many directions and this is something we like to do. So this time we set out to make chia seed bread and smoked it with cinnamon smoke to give it the smell and taste of traditional wood oven bakery bread found in Sri Lanka. This bread is nice to have as it is with just plain butter or in a sandwich when you toast a bread slice it gives an aromatic flavour which is perfect if you are having it with a soup. If you are interested in different types of bread check out this amazing blog called Butter with a side of bread

A quick thing to note is that kneading is important for any kind of bread dough, this is something which we have mentioned before.  So if you are kneading with a mixer using the bread hook mix for about 15 minutes not more because it is possible to over-knead.  and if you are doing it by hand make sure that you stretch and knead until you feel that the dough has changed its consistency to become more stretchy.

 

Finally, if you like to make a simple bread you can skip applying butter and spreading chia seeds and follow the rest of the steps.

Proof the yeast

To a small cup add sugar and yeast. Mix with 40 ml lukewarm water. Mix with a spoon until no lumps of yeast are present in the mixture (to make lukewarm water: mix a small amount of hot water with cold water, when you dip your finger if you feel slightly warm then this should be fine)
After a few minutes, you will see the bubbles forming and the top will be frothy if this does not happen that can be your yeast is dead, too old or expired.

For a standing mixer with a dough hook attached add 175g of all-purpose flour. To the same add non-iodine salt and add 220 ml of warm water. Gently mix in medium speed until it comes together.
Now add the frothy yeast mixture which helps to leaven your bread. Add rest of the flour which is 175g to the mixer and mix at medium speed for 10 minutes until a cohesive dough is formed. Now its time to add the unsalted butter ( 1 TBSP at a time), keep mixing until the dough comes back together.

Keep the dough on a floured surface and gently rotate the dough with slight pressure and bring it a nice ball.

Let the dough proof

Keep the dough on a greased bowl, cover with a cling film and let it rest for 1 hour until the dough rises 2-3 times the original size.

Sprinkle chia seeds

On a lightly floured surface, with lightly floured hands add the dough on to the surface, by using a rolling pin flatten the dough on to a thin layer. Melt the butter and apply a thin layer using a brush. Sprinkle the chia seeds on the buttered surface

Roll the bread and let it proof

Gently roll the dough as shown in the picture fold the two edges inwards and place it inside of a greased bread pan. Leave it to proof for 40 minutes.

Ready to bake

On a preheated oven at 180C bake it for 40 minutes. We placed flamed cinnamon tablets inside the oven to infuse the cinnamon smoke into the bread.

Once completed cool it on a wire rack.

You can enjoy the bread as it is or after cooling it down whichever way should taste amazing.
