    Tharaka is trying to manage his habit of having to chew on something during meals. Especially at work, he tends to eat snacks which are high in oil and are full of carbs. So we decided to do something about it and made a granola bar with ingredients that we like, for the first try it was very good. We shared it with our friends and they all love it.  You can make your own version with other ingredients such as different types of nuts and raisins but the basis is still the same.

    Try it and you will love it. Plus these granola bars are way cheaper than store-bought once.

    Prep the ingredients

    Deseed the dates. Chop walnuts and cashew nuts into small pieces

    10-15 minutes

    Mixing the dry ingredients

    Mix Oats, Cashews, Walnut and transfer the mixture into a pan under medium-low heat
    Mix it for about 10 - 15minutes or until the colour of the oats and nuts has changed into light brown as shown in the image

    Add Honey and Oil

    Transfer the heated mixture into a bowl and let it cool
    Add desiccated coconut and dates and mix well

    Mix everything together

    Add honey and oil to the mixture and mix it using a spatula until compleat mixture is fully coated with oil and honey

    20-25 minutes

    Ready for baking

    Lay a baking paper on a baking tray and transfer the mixture onto the tray. Spread it evenly by using a flat pan giving pressure
    We used a baking tray which is 16*30 cm, the thickness of our granola bars was about 1.3cm
    Use a tray that you have which is closer to this, it is best not to make it thinner than this as it might break easily after baking

    Preheat the oven to 140 C and bake for 20-25 minutes

    Ready to eat

    Take the tray out of the oven and let it cool for at least 2 hours
    Cut into 20 equal size pieces

    You can store them in an airtight bottle for up to 2 weeks or more if refrigerate them
